I know there's stuff that need to be there in the bottom of emails, but if we could be able to change the wording, so we could use more of our own tone-of-voice even in that text - that would be awesome...

It's all those little things. Like the attached example from a newsletter I've received that's been sent via convertkit.

Could be placed in the Email design setting, and some things locked in place but other parts could be edited.
